yummy prawn soup

Tasty Tiger Prawn soup recipe by Chapman To Man Chak which Jordan made it several times. He sometimes add lobster in it as well.







3-4 SERVINGS

ingredients

10 pcs Frozen tiger prawn


10 g Butter


1 Onion


Right amount of Olive oil


½ Chopped celery


½ Chopped carrot


3 Cloves garlic, peeled and slightly smashed


1 Box Chicken broth


Right amount of Thyme


2 Bay leaves


1 Can of peeled tomato


40 g Rice


Right amount of Sweet Paprika


Right amount of Cayenne Pepper


Right amount of Brandy


Sea salt


240 ml Heavy Cream


2 Cloves garlic


Pepper


Cilantro



preparation

STEP 1

Remove the head and shell of the tiger prawns, and separate the meat for later use.


STEP 2

Hit olive oil in a large soup pot over medium-small fire. Add head and shell of the tiger prawns, take it out and put it into a bag until it's fried. Add butter, onion, carrot, celery and 2 cloves of garlic and cook, stirring occasionally, then add chicken broth. Add the bag of head and shell of the tiger prawns, thyme and bay leaves, cook for 45 minutes over medium(/small).


STEP 3

Heat butter and 2 cloves of garlic in a pan, add meat of tiger prawns and cook, season with sea salt and set aside.


STEP 4

Add peeled tomato, rice, sweet paprika and cayenne pepper into the soup pot, wait until it's boiling, take the bag of head and shells out, add heavy cream and brandy, season with sea salt and pepper. Pour everything to a food processor. Pour into bowls when it's done, then garnish with the fried prawn meat and cilantro.
